Early Life

Bayless was born on November 23, 1953, in Oklahoma City, U.S., to a family of restauranteurs and grocers specializing in local barbeque. His parents owned a barbeque restaurant called Hickory House. His elder brother, Skip Bayless, is a sports journalist and television personality.

Bayless became interested in cooking at a young age and began his culinary training. He attended the University of Oklahoma and earned a Spanish and Latin American Culture degree. After that, he enrolled at the University of Michigan and completed his master’s degree in linguistics. After completing his Ph.D. in anthropological linguistics, Bayless decided to pursue a career after completing his PhD in cooking.

Professional Career

 Bayless became the host of the television show Cooking Mexican on PBS in 1978. He hosted the show for 26 parts and ended in 1979. Then, he spent six years in culinary research in Mexico and published his cookbook Authentic Mexican: Regional Cooking from the Heart of Mexico in 1987.

In the 1980s, Bayless became an executive chef at Lopez y Gonzalez in Ohio. In 1987, he opened his first restaurant, Frontera Grill, in Chicago with his wife, Deann. It specializes in contemporary regional Mexican Cuisine. In 1989, he opened one of the first fine-dining Mexican restaurants, Cuisineago, called Topolobampo.

1995, Bayless and his partners started Frontera Foods, a food manufacturing company that offers prepared products such as guacamole, cooking sauces, and frozen bowls. In 2016, ConAgra Foods acquired Frontera Foods, but Bayless stayed there as a product development advisor. 

Bayless joined the television series Mexico: One Plate at a Time in 2000 on PBS. It premiered on the network in January 2000 and concluded in June 2019 after 12 seasons. The show has earned nominations for several Daytime Emmy Awards. Bayless received two Emmy Awards nominations for Outstanding Lifestyle/Culinary Host in 2012 and 2017.

In 2003, Bayless started the  Frontera Farmer Foundation, which provides financial support to Chicago’s local farmers by offering capital improvement grants. He became a contestant in Iron Chef America in 2005 but lost to Chef Bobby Flay by one point. Then, he appeared as a guest judge in an episode of the fourth season of Top Chef and competed in the first season of Top Chef Masters.

Bayless often collaborates with Deann and his daughter Lanie and writes several cookbooks. One of his best-known cookbooks is Mexico: One Plate at a Time, which won the 2001 James Beard Foundation award.

Personal Life

Bayless married Deann Bayless in 1979. He met Deann while he was doing PhD in Michigan. The couple share a daughter, Lane Ann Bayless.
